Juárez neo-cantina serving Nuevo León flavors-fermented salsa, ash-dusted carne asada, 100% Mexican bar. Chef Lucía Cañas (Azurmendi-trained) and Roberto Almaguer built Fierro as a modern interpretation of a northern Mexican cantina. Short menu built on Nuevo León, Coahuila, and Tamaulipas traditions-carne asada dusted with corn ash, arroz with chicharrón and jocoque, ensalada Fierro with grilled romaine and machaca, crudo de pescado cured with Chiapas coffee, capirotada with dulce de leche ice cream. Every drink is Mexican: raicilla, sotol, bacanora, pox, Mexican gin and whiskey.
